Description

Bûche de Noël is one of many traditional cakes baked at Christmas. As the name suggests, it is of French origin. The name of this recipe literally translates as "Christmas log," referring to the traditional Yule log burned centuries past.
You already know my love for foreign culinary traditions: French pastry is notoriously one of the best in the world!
This cake in particular is composed of a chocolate sponge cake filled with a hazelnut custard and covered with a mixed milk/dark chocolate ganache.
I prepared it with FedeMidnight :iconfedemidnight: (who has also taken this photo) for our best friend Ilaria Heart

RECIPE
italian cocoa sponge cake
250g eggs (3 or 4, it depends on their dimension)
120g sugar
100g flour
25g not-sweetened cocoa
1/2 teaspoon honey
vanilla flavour (better vanilla beans)

Beat the egg whites whit vanilla, sugar and honey until stiff, add the yolks and then stop beating. Add the sifted flour and cocoa and slowly blend with a spatula. Cover a square pan with baking paper, fill with the dough (it must be very large and low, max 1cm high) and flatten with a spatula. Bake at 250° (480F) for 7-10 minutes. Do not leave to cool: you must roll it up in a wet rag as soon as you take it from the oven.
